As the given name ‘King of Fish’ suggests, Turbot is deemed one of the finest fish that swims the shores of the British Isles.
A large salt water flatfish, turbot is unlikely to ever win any aquatic beauty contests. With lumpy brown skin and a tiny head, a turbot, it is found primarily close to shore in sandy shallow waters throughout the Mediterranean, the Baltic Sea, the Black Sea and the North Atlantic. The European turbot has an asymmetrical disk-shaped body, and has been known to grow up to 100 cm (39 in) long and 25 kg (55 lb) in weight.
Turbot has a delicious but delicate thick, meaty white flesh and should be cooked gently without other overpowering flavours. It is perfectly suited to fine dining and a real treat for all that eat it.
