We proudly source these premium fish from dedicated, high-welfare farms located within a 15 mile radius of our premises. These mineral-rich chalk streams produce trout with unmatched flavour and texture.

We also smoke Chalk Stream Trout at our very own Premier Smokehouse, creating a delicious product for many menu applications.
